The Jerusalem artichoke (Helianthus tuberosus), also called sunroot, sunchoke, earth apple or topinambour, is a species of sunflower native to eastern North America, and found from eastern Canada and Maine west to North Dakota, and south to northern Florida and Texas.[1] It is also cultivated widely across the temperate zone for its tuber, which is used as a root vegetable The flowers are yellow and produced in capitate flowerheads, which are 5-10 centimetres (2.0-3.9 in) in diameter, with 10-20 ray florets. The tubers are elongated and uneven, typically 7.5-10 centimetres (3.0-3.9 in) long and 3-5 centimetres (1.2-2.0 in) thick, and vaguely resembling ginger root, with a crisp texture when raw. They vary in color from pale brown to white, red, or purple.[2][4] The artichoke contains about 10% protein, no oil, and a surprising lack of starch The tubers are sometimes used as a substitute for potatoes:they have a similar consistency, and in their raw form have a similar texture, but a sweeter, nuttier flavor; raw and sliced thinly, they are fit for a salad. In Baden-Württemberg, Germany, over 90% of the Jerusalem artichoke crop is used to produce a spirit called "Topinambur", "Topi" or "Rossler".[13] By the end of the 19th-century Jerusalem artichokes were being used in Baden to make a spirit called "Jerusalem artichoke brandy," "Jerusalem artichoke", "Topi", "Erdäpfler" "Rossler" or "Borbel."

Healthy and Nutritious
My grandmother grew these and ate them three times a week, one raw and two cook, about the size of an egg. (She lived to be a hundred and four.) Wonderful for people to regain control of blood sugar. Tasty, nutty, sweet treat. Terrific raw on salads or baked like a potato. They arrived crispy fresh, with lots of budding eyes, and are huge. Living in Florida, we plan to get them in the ground right away. Hoping for a nice crop of our own.

I've an area that is perfect for this plant and I'll have enough to share with my neighbors and friends. I don't think I had even one tuber that did not grow. Looking forward to fall harvest.. Very viable product.

This year, I wanted to try several varieties of Jerusalem artichokes. They arrived quickly and were all very healthy. The plants are now very robust and I can't wait until it's time to harvest them.

I planted these last October and now they are growing very well. I love the bright yellow flowers and can't wait untill the roots are ready to harvest.

Wow, those are some big tubers! Arrived in good shape, with little teeny growing shoots, and they were by far the largest sunchoke tubers I'd ever seen. I hope they grow that big for me...

Healthy and robust
Big, healthy tubers I planted in containers (I've heard they spread easily) and are growing beautifully. I'll post some pics when they getlarger.

Arrived promptly; I planted them and they are already over a foot tall! Looking forward to the harvest in the fall.
